2 ½ Tbsp olive oil
1-2 Tbsp lemon juice
salt and pepper
- Preheat oven to 375°F.
- Clean radishes and cut off stems, and cut in half lengthwise.
- Toss all ingredients together in a mixing bowl.
- Spread radishes onto a baking sheet and roast 25-30 minutes until radishes are tender on the inside and crispy and brown around the edges.
***For some variety, throw in some baby carrots to roast with the radishes. If you're really feeling adventurous, sprinkle 1/2 tsp. ground turmeric into the mix.
